Bruschetta Recipe

So a few of you asked for the bruschetta recipe, here it is!


Double Tomato Bruschetta

Ingredients:
  • 6 Roma (Plum) tomatoes, chopped
  • 1/2 cup sun-dried tomatoes (it says packed in oil--I couldn't find this so I just did sun-dried tomatoes diced up, soaked 'em in a little oil for about 10 minutes and called it good....and it was!)
  • 3 cloves minced garlic
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar (YUM)
  • 1/4 cup fresh basil, stems removed
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 french baguette (I used a loaf of french bread, thinly sliced)
  • 2 cups shredded mozzarella cheese
Directions:
  1. Preheat the oven on broiler setting
  2. In a large bowl, combine the Roma tomatoes, sun-dried tomatoes, garlic, olive oil, balsamic vinegar, basil, salt and pepper. Allow the mixture to sit for 10 minutes (I let mine sit over night to let the flavors really blend together)
  3. Cut the baguette (or french loaf) into 3/4 inch slices. On a baking sheet arrange the baguette slices in a single layer. Broil for 1 to 2 minutes until slightly brown.
  4. At this point you can either melt a little of the cheese onto each slice of bread or you can top each piece with the tomato mixture, put cheese on top and broil for another 5 minutes or so, or until the cheese is melted. (I did the former)
Eat and enjoy!! I kind of liked the bread lightly toasted so it was still a little soft but crispy, however Heath liked it really cruchy, so try it out!

**I also really liked eating it on a toasted bagel! It made a great lunch!

SHUSHI.

I've eaten sushi before. But never in Utah. So when our friends Joanna & James invited us to go to Happy Sumo in the Riverwoods, Heath & I were a litttttttle skeptical. But we decided to go anyway & give it a shot. Boy are we glad we did! Talk about DELICIOUS! It was great! Plus we were able to see our friends--always a plus. Here are some pictures:

Bruschetta

I got in the mood to make bruschetta the other day, so I found a recipe and decided to give it a shot. Best idea, ever! It was SO GOOD! not even kidding. My mouth is watering thinking about it. In fact, for lunch today I had just a little left and I toasted half a bagel, melted some mozzarella cheese on it, topped with bruschetta=DREAM LUNCH. If you want the recipe let me know!

Date Night

Heath & I have been trying to make a better effort to have date night once a week--for both of our mental well-being. With Heath being in Law School now--which is time consuming and mentally exhausting & me working--which is mentally & emotionally taxing at times, I think we both need it!

Our first date night we went to Hot Dog King on State Street in Orem:


Heath had the "Oklahoma Dog"--Boomer Sooner baby! and I had the "Venezuela Dog" Here's a picture for perspective:


Pretty big! They were sooooo good! and the service was great--friendly to say the least!



After dinner we went to Shrek: Forever After, cute movie! except for a few crying babies we had a good time!


And afterwards we went and used some coupons at Coldstone....I love that place.....


Yum! I like this date night thing...

Double.

A few weeks ago (has it already been weeks??) Heath & I doubled with my friend Angie & her boyfriend Steve! I wish we lived closer (SLC is soooo far away ;) ) We had a blast! We went bowling at Fat Cats--Steve had a great coupon for Costa Vida/Bowling! and to our pleasant surprise, about half way through, the black lights came on for some psychadelic bowling. Then we went to get some delicioso frozen yogurt where we learned some important things
  1. gummy bears in ice cream will turn rock hard.
  2. Angie & Steve will absolutely share the biggest most fantastic looking ice cream ever made
  3. Cheese cake bits absolutely belong on top of frozen yogurt.

California Vacation

Heath & I were able to have a week long getaway with my family & my aunt's Julie's family in San Diego (more particularly, Cardiff-by-the-Sea). It was gorgeous! We had a great time! The weather was pretty cloudy and cool, but we did get some sun--I have a sunburn to prove it!

Mostly we just enjoyed each other's company, played games, ate, talked explored the beach and Downtown San Diego--as stress free as possible! Nothing was really planned for a change!! It was great! Plus Heath & my dad were able to get in 2 rounds of golf--one at Torrey Pines which was pretty sweet for them! Sara & I got to be their trusty caddies ;)

Heath hit his ball into the water on the 18th hole and it was sticking out so he played it, left handed and got all wet! (see the middle picture!)


Good food, Wii, great view, Gaslamp district, beaches and good conversation!

# Anniversary Day 2 #

The 2nd day we spent up in SLC for our Anniversary was spent doing some exploring. We did a little more prowling around the Gateway Mall, then we jumped on the Trax and went to this art exhibit downtown. It was interactive, which is pretty sweet in my book--putt putt golf! Here are some pics of what we did:

It was pretty fun, & FREE! Each hole was created by a different artist & had its own interpretation. There were some pretty interesting ones.

The rest of the day we went exploring the developing downtown SLC area:



& then we were lucky enough to shoot this beautiful building with our new dSLR camera--a nice hommage to where we were sealed and married just 2 years ago, too bad it was closed for repairs/cleaning!
